
Vegan Chik’n and Waffles has been on my list of things to make since forever…
I’m so pleased I finally got around to it!
Crispy, Southern fried veggie meat on a sweet, fluffy Belgian waffle? What more can you ask for from a vegan brunch?
I’ve actually been testing this recipe for several months. For a while, I was trying to do a gluten-free version.
I soon realized, however, that the perfect homemade gluten-free faux chicken recipe is something I have neither the time nor the patience to crack.
Instead, I developed a recipe that for delicious Southern fried battered vegan chik’n that can be made with any plant-based meat alternative.
I used vegan smoked duck! It tastes like chicken, just a bit sweeter, making it PERFECT for this vegan chik’n and waffles recipe.
I used to buy sandwiches using this vegan mock duck from an incredible deli in San Francisco. I finally found it available for purchase at a tiny shop called Bodhi Vegetarian Supply in Rosemead, California.
This vegan duck can be found at certain Asian grocery stores. I found it by googling “best vegan meat in Los Angeles.”
If you can’t find the vegan smoked duck, fear not! This vegan chik’n and waffles recipe can be made using and soy or wheat chicken you can find.
Bonus points if you use your own homemade seitan! (That’s another recipe I’ve yet to crack, hence the store bought vegan meat.)
